I really like the show but I'm wondering what good is extending it to 2 hours when they are just using the extra hour for stalling?

They didn't just use the extra hour for "stalling". There was some BTS stuff interspersed at times.

Shateel ended up dealing for $375,000. Her case, however, had $400,000 in it.

Thing is...she probably did the right thing. If she knocked out the 750k, her offer would have dipped big time. Then she'd have a choice to go for it or take a deal which would have been somwhere between 400k and 1 penny. You'd have to be quite a gambler to go all the way when all you have left are those two amounts. Risking the decent deal when you have 50/50 odds of walking away with a penny? Not a good idea.
So, I think she did it right.
